This is a cocktail I came up last spring to take the edge off rough tequila without burying all the flavor. Essentially it is a dressed up margarita.
1 1/4 oz. reposado tequila (I used 1800)
3/4 oz. Aperol
1/2 oz. lime juice
1/2 oz. simple sugar (eq. of one cocktail spoonful of sugar)
2-3 dashes Peychaud’s bitters
Put all the ingredients in a cocktail glass; add ice, shake and strain into a martini glass. Garnish with an orange wheel and serve.
If I’ve got a particularly mild tequila I’ll up the ratio to 1 1/2 tequila, 1/2 Aperol.
